Enjoy this great summer salad. Serves 6
Dressing
1/3 cup rice vinegar or cider vinegar
1/4 cup peanut butter
3 tablespoon brown sugar
1/2 teaspoon salt
1 tablespoon soy sauce
1 teaspoon sesame oil
Ingredients
7 to 8 cups (about 1 ¼ pounds) coarsely shredded green cabbage
1/8 teaspoon red pepper flakes to taste (optional)
1/2 cup roasted unsalted peanuts, coarsely chopped
Instructions
Place dressing ingredients in blender and process on low until well mixed (taste for balance of flavors and adjust if necessary)
About 1 hour before serving, place dressing in large bowl, and add cabbage about 2 cups at a time. Stir in pepper flakes. Cover bowl and chill
At serving time, add peanuts, toss, and transfer to serving bowl. Use slotted spoon for serving.
